Turkey Sausage & Peppers

Ladies, it does not get much easier than this. This is my "in-a-pinch" dinner, the one I make when I forgot to plan ahead or when everything hits the fan. It requires minimal ingredients and takes about 10 minutes to make. Plus the kids think they're eating hot dogs and can dip them in ketchup. Mom for the win!

Ingredients

2 Tbsp olive oil
1 package turkey polska kielbasa or smoked sausage (like Hilshire Farms), cut into 1 inch pieces
1 red pepper, sliced
1 yellow pepper, sliced
1 green pepper, sliced
1 onion, sliced
1 clove garlic, minced
Paprika
Chili powder
Garlic powder

Instructions

Heat olive oil in a large pan over medium-high heat. Add the peppers and onions and saute until they begin to soften. Add the sausage and continue to cook, stirring occasionally. When the sausage begins to brown and the peppers and onions are beginning to char, sprinkle with a dash of paprika, chili powder and garlic powder. Add the garlic clove and cook for another 3 minutes.

Remove from the heat and serve with spicy mustard or ketchup.
Serves approximately 4.
