1 large sweet potato, peeled & diced into one inch cubes
1 green pepper, chopped 1 red pepper, chopped 1 onion, chopped 1 package turkey polska kielbasa, diced into 1/4 inch rounds 4 eggs, scrambled Sprinkle Mexican cheese blend (optional) Olive oil 1/2 tsp garlic powder 1/4 tsp paprika 1/4 tsp chili powder Salt & pepper |

Preheat oven to 425 degrees F. Line a rimmed baking sheet with foil and spray with olive oil spray. Toss sweet potatoes in a drizzle of olive oil, salt and pepper and spread out evenly on the pan. Roast for 20-25 minutes, stirring halfway through. Potatoes are done when they're crispy on the edges.
While the potatoes are roasting, heat 1 Tablespoon olive oil in a large pan over medium heat. Add peppers, onion, turkey polska kielbasa, garlic powder, chili powder and paprika, sauteing until cooked through, about 10-15 minutes. Remove from heat. When the potatoes are finished roasting, gently stir them into the pan with the peppers, combining everything together. In a separate small pan, quickly cook the scrambled eggs. Place the eggs on top of the sweet potato hash and top with a small sprinkle of cheese if desired. This is delicious served with hot sauce! Makes 4 large servings. |
